Fenugreek is easy to grow and a beautiful micro-green to produce. Fenugreek is a legume with a distinct flavor, used traditionally in Indian and Middle Eastern cooking.
Medicinal and Nutritional Benefits – According to the National Center for Complementary and Alternative Medicine, fenugreek is commonly used to treat skin inflammation, diabetes and to increase milk production in breastfeeding women.
As a medicinal herb, fenugreek is seen as a tonic, astringent, demulcent, expectorant and emollient. Herbalist Michael Tierra suggests its use to treat any condition that has mucus or lung congestion
Culinary Uses – Bitter, yet also rather sweet and grassy, fenugreek is most commonly used to flavor Indian and Sri Lankan curries, but are also found in cooking of the Eastern Mediterranean.
Eat fenugreek sprouts as a snack, fresh-in-hand, added to sandwiches, salads, juiced with vegetables, mixed with potato salad and other root vegetables; use as a garnish, added to soups, rice and pasta dishes and stir-fries, just before serving.
Fenugreek sprouts are quick and easy to grow. Use Fenugreek sprouts on bread and spreads for lunch, and with salads on the evening meal. Do not cook sprouts as they go mushy.
Fun Fact- Fenugreek is a galactagogue, which sounds like a space-faring alien, but it’s actually a milk-producing agent thought to increase the production of breast milk in new mothers.
In various areas of North Africa the seeds (ground into a paste) were traditionally eaten by women to gain weight, in combination with sugar and olive oil. The seeds are still used for weight gain in Libya and other areas. They are also an important source of diosgenin, which is widely used in the production of steroids (which probably accounts for the weight gain), sex hormones, oral contraceptives and veterinary medicines.
